A triple take on dessert bars, these oreo cheesecake brownies will be the star of the evening with a creamy layer of cheesecake, fudgy brownies, and everyone's favorite chocolate sandwich cookie.
Preheat oven to 350°F. Line a 9-inch square pan with aluminum foil or parchment paper. Set aside.
In a large microwave-safe bowl, melt the chocolate and butter until smooth. Heat in 20-30 second intervals, stirring after each one. Let cool slightly.
In a medium bowl, combine the flour, cocoa powder, and salt.
Add sugar into the melted chocolate, whisk until combined. Add in eggs and vanilla. Whisk until combined.
Fold dry ingredients into the chocolate mixture. Gently mix until smooth.
For the cheesecake layer, beat the cream cheese until fluffy. Add in the sugar, egg, and vanilla. Whisk until smooth.
Pour the brownie batter into the prepared pan, smooth the top. Arrange Oreo cookies, gently press into the batter.
Spread the cheesecake mixture all over the top. Sprinkle with crushed cookies.
Bake for 35-40 minutes until edges are slightly golden. Cool on a wire rack. Refrigerate for at least 1 hour before serving.
