In a saucepot, melt the butter and add in the flour to make a roux.
Add all the spices and whisk.
Slowly pour in the beer to the roux, whisking while adding. Once incorporated, drizzle in the milk slowly while whisking and remain thickened.
Add the cheeses, starting with cubes or slices if using, allow to melt and then add shredded cheese.
Once all cheese has melted, serve with soft pretzels!

You need 2 cups of cheese total. You can mix and match the varieties you like. Cheeses do not have to be shredded. Use what you have. You can slice, cube, or shred cheese. Just start with the thicker pieces and wait for those to melt before adding additional cheese. Or shred it all and add all at once.
Use blocks of cheese not pre-shredded cheeses as those contain flour and other binders that will not melt as well.
Like a spicier cheese dip? Add in some cayenne pepper, jalapenos, or even some hot sauce to the mix. Some additional mix-ins include diced tomatoes, onion, ground beef, or green chiles.
