Divide mint leaves and strawberries between two sturdy glasses. Use a muddler to crush the mint and strawberries to release the mint oils and strawberry juices. Don't crush too much or you'll get tiny pieces of mint through your straw.
Divide the juice from 1-2 limes wedges and the sugar into the two glasses, then muddle again to release the lime juice. Do not strain the mixture.
Add ice, filling the glasses almost to the top. Pour the rum over the ice, and then top off with club soda.
Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
You may optionally substitute 3 teaspoons of simple syrup for the 1/2 tablespoon of granulated sugar.
