Cream the butter and sugar, add the egg yolk, then slowly add the orange juice.
Slowly add in the flour until combined.
Wrap in plastic wrap and refrigerate for at least one hour.
Preheat the oven to 375 degrees F. and line insulated baking sheets with parchment paper or silicone baking mats.
Use only part of the dough at a time, keeping the rest in the refrigerator until ready to use.
Using the manufacturer’s directions from your cookie press, add a decorative plate. Add part of the dough to your cookie press. Press out cookies, keeping them 2-inches apart.
Add decorative sprinkles or colored sugar then bake 8-9 minutes. If you want to drizzle some of your cookies with melted chocolate, do not add sprinkles or sugar before baking.
Do not over bake. The edges should be lightly browned.
Cool cookies on wire racks.
When cool, drizzle melted chocolate over the cookies that weren't already decorated.

Store these in airtight containers and take them with you for your holiday gatherings.
You can make the dough, wrap it in plastic wrap, and store it in the refrigerator for up to 4 days. To keep it longer, wrap it tightly and store in a freezer bag in the freezer for up to 3 months.
