1/4cuppacked brown sugar
3/4cupgranulated sugar
1large egg
1 1/4teaspoonspure vanilla extract
1 1/4cupsall-purpose flour
1/2teaspoontable salt
1/2teaspoonbaking soda
1/2teaspoonbaking powder
1cupminiature semi-sweet chocolate chips
Instructions
Brownie Layer:
In a medium saucepan, melt the butter over medium high heat. Add the sugar and cocoa powder once the butter is melted.
Whisk to combine and remove from heat. Add the salt, vanilla and eggs and continuously whisk until the eggs are combined.
Add the flour and continue to mix. Set batter aside.
Cookie Layer:
Cream together the butter and sugars in a mixer. Add the egg and vanilla, making sure to scrape down the sides of the mixing bowl.
Add the flour, salt, baking soda and baking powder and mix on low until everything is incorporated.
Fold in the chocolate chips.
Set dough aside.
Assemble Layers:
Preheat the oven to 350 degrees F. Line the bottom of a 9x9 baking pan with parchment paper. It's best to leave an overhang on all sides to make it easy to remove the brownies!
Spread the cookie dough into the pan, pressing down with a fork or your fingers.
Add a single layer of Oreo cookies, using as many as will fit. We used 21 cookies, one of those broken in half to fill the space.
Add the brownie batter on top of the Oreo layer.
Spread the batter so that it completely covers the Oreo layer.
Bake:
Bake for 35-40 minutes. Test for doneness by inserting a toothpick into the center. The toothpick should come out clean.
Move pan to a cooling rack and allow to cool for two hours.
Lift the brownies out with the parchment paper handles and cut into squares.
