Pomegranate Clementine Spinach Salad

Ingredients

baby spinach
cleaned

clementines
sectioned
1/4
cup
pomegranate seeds
1/2
cup
virgin olive oil

Tablespoons
orange juice

Tablespoons
lemon juice
2 1/2
Tablespoons
honey
can use a fine sugar instead
2
teaspoons
dijon
1/2
teaspoon
salt
2
teaspoons
poppyseeds
Instructions
In a small bowl, mix together the olive oil, orange juice, lemon juice and dijon. Adjust to taste with the honey and salt. Add in the poppy seeds.
In a large salad bowl, toss together the spinach, clementines and pomegranate seeds.
Drizzle on as much of the dressing as you desire and serve.
Makes 2 main salads, or 4 side salads.
