Baked lamb chops don't have to be overly complicated. With a little help from some flavorful spices and a toasty warm oven, you'll have impressively tender chops on the table in around 30 minutes.
Whisk all ingredients (except lamb chops) together in a bowl.
Using gloved hands, massage oil and spice mixture all over both sides of the lamb chops.
Heat a large (dry) oven proof skillet over medium high heat. Once the skillet is hot, add the lamb chops.
Sear chops on one side for 3-5 minutes. Turn chops over and sear another 2-4 minutes.
Place skillet in oven, uncovered, and bake for 10 minutes (for medium rare).
Remove from oven and transfer chops from skillet to a cutting board and tent with foil. Allow to rest for 5 minutes.
Notes
Lamb is best when cooked to medium-rare, but if you prefer medium increase the time in the oven to 15 minutes instead of 10.
Remove your lamb chops from the refrigerator about 30 minutes before cooking. Letting your lamb reach room temperature allows the meat to relax, compared to when it’s cold, it tenses up. Lamb is a meat that cooks quickly and can dry out easily, therefore it’s best to have it at room temperature so that it evenly cooks.
