Crisp and crunchy, sweet and salty, and a good source of vitamin A - these air fryer sweet potato chips are one of the best snacks to munch on when you're craving potato chips.

Instructions
Wash and peel the sweet potatoes.
Using a mandolin slicer slice the sweet potatoes on a thin setting. Make sure that the slices have an even thickness on each slice. If the slices are too thin on one side that side will burn before the thicker side cooks.
Soak all of the slices in a large bowl covered with cold water for 20 minutes. This removes some of the starch for a crisper chip.
Thoroughly dry the slices with a towel or paper towels.
Lightly brush the outside of each slice with a light coating of the vegetable oil.
Sprinkle the salt and pepper or other optional spices onto each side of the slices.
Place on the air fryer wire rack or basket and make sure that the slices are not touching each other.
Cook for 7-8 minutes at 250 degrees Fahrenheit and then flip over each chip and cook for another 7-8 minutes. Check at the 5-minute mark for each side to make sure they do not overcook and burn. Remove and serve.
Notes
You can swap out the vegetable oil with another high-heat oil like avocado, canola, or grapeseed oil.
Please note that the thickness of your slices will alter the time needed for them to crisp up. The thinner the slice, the less time they need, and the thicker they are, the longer they will need.
Through experimenting, this low-heat method worked the best with the least amount of burning. Keep in mind that each air fryer works a little differently. You can always add more cooking time or use less time to get your perfect chip. Make sure to flip over periodically at 7-8 minutes.
