Instructions
Peel and dice the sweet potatoes into 1 inch cubes. Add to a pot with 4 cups of water. Bring to a boil and cover for 10 minutes or until fork tender. Drain the sweet potatoes of excess water and transfer to a large mixing bowl.
Add the milk, butter, salt, and pepper to the bowl and use a hand mixer to quickly mash the sweet potatoes.
Transfer to a serving bowl and smooth with the back of a spoon to create ridges. Top with two pads of butter and fresh parsley. The butter will melt into the ridges ensuring a silky, buttery drizzle in every spoonful.

Easily make this sweeter with warm fall spices, a drizzle of maple syrup, or a sprinkle of brown sugar. Elevate the savory by adding garlic powder, minced garlic, onion powder, fresh parsley, or even a hint of paprika.
