Peel and wash the carrots. You can leave the ends on or trim them off. Check to be sure the carrots fit into your air fryer before wrapping with bacon.
Dry the carrots with a paper towel.
Wrap one piece of bacon tightly around one carrot. Lay the carrots end-side down on the air fryer grate, to keep the bacon from curling up while cooking.
In a small bowl whisk together the brown sugar, salt, nutmeg, and dried thyme. For less of a texture top, you can add ⅛ cup of olive oil and make this a brushable topping.
Air Fry at 385F for 11 minutes. After 6 minutes, open and sprinkle the carrots with your brown sugar mixture - or brush if using the brushable version.
Bring back to the air fryer and continue to cook until finished. Top with fresh thyme if desired.
Notes
This recipe can easily be doubled, you will want to work in batches if so.
You do not need to preheat your air fryer. Place the bacon wrapped carrots in and turn on. The extra minute or so to warm up will not ruin the recipe.
