Clean the potatoes with cold water and a soft brush. Cut into ¼ inch slices.
Add to a large bowl of cold water and allow to sit for 30 minutes. Drain the potato slices and dry on a paper towel for another 30 minutes. Be sure the sticks are completely dry before tossing with olive oil and air frying.
In a bowl, drizzle the oil and sprinkle the salt and pepper over the fries. Toss to coat evenly.
Preheat the air fryer to 375. Add the fries in batches if needed. Try not to overcrowd the basket for even cooking.
Air Fry at 375F for 13 minutes, increase heat to 400F for 3 minutes.
Sprinkle with parsley, parmesan, and dip in ketchup or your favorite fry sauce.

We've found that Yukon gold and russet potatoes work best for air frying, but feel free to experiment with your favorite kind of potato. Yukon gold will produce a soft, yet crunchy fry and russet potatoes give you more of a classic french fry taste.
Be sure your fries are completed dried off before air frying.
