Preheat oven to 350°. Spray a 9-inch by 13-inch pan with non stick spray.
In a medium sized bowl mix the sausage, hamburger meat and salad dressing mix. Press meat mixture evenly in the bottom of the 9-inch by 13-inch pan.
Place in the oven and bake for 20 minutes. Remove from oven and heat oven to 375°.
While meat is cooking, slice the onion in half then slice into thin half onion slices. Separate slices and place in a skillet. Pour olive oil and 2 Tablespoons of butter over onions. Cook over medium low heat until onions are translucent. Add the balsamic vinegar, sugar, garlic salt and seasoning salt and cook for another 2 to 3 minutes to carmelize the onions.
Spray a separate 9-inch by 13-inch pan with non stick spray. Cut the rolls in half and place bottom half in the pan.
In a small bowl, mix the dijon mustard and onion powder, then spread over the rolls in the pan.
Place hot meat over the mustard.
Layer the cheddar cheese over meat in two layers. Layer the pepper jack over the cheddar.
Spread the carmelized onions over the cheese.
Place the top of the rolls back on and spread remaining butter over tops. Sprinkle with sesame seeds.
Cover rolls with aluminum foil and place in the oven for 15 minutes. After 15 minutes, remove foil and bake an additional 5 minutes until tops are slightly browned and cheese is melted.
Serve immediately.
