Avocado Toast

Love avocados? This simple avocado toast recipe is the perfect way to marry the flavors of guacamole with an open faced breakfast sandwich.

Ingredients

  • 1 ripe avocado
  • 1 tablespoon fresh cilantro chopped
  • Juice from 1/2 of a lime
  • Sea Salt
  • Freshly ground black pepper
  • 4 slices bread
  • 1 clove garlic peeled and halved
  • 2 tablespoons olive oil or softened butter
  • Crushed red pepper flakes optional

Instructions

  • Cut the avocado in half, remove the pit, scoop the avocado from the skin, and place in a small bowl.
  • Mash the avocado with a fork.
  • Stir in the chopped cilantro and lime juice.
  • Season with salt and black pepper.
  • Toast the bread and rub each slice with the cut side of the garlic.
  • Brush toast with oil or softened butter. Season with salt and pepper.
  • Gently spread mashed avocado mixture evenly on each toast slice and season with more salt and pepper if desired.
  • Sprinkle with red pepper flakes.

Notes

Serve with an egg on top for additional protein!
