This Strawberry Salsa is naturally sweet, savory, refreshing and crisp. It combines plump strawberries with savory ingredients like jalapeño pepper, crisp red onion, and cilantro for that fresh summertime taste.
1poundstrawberrieswashed, tops removed and diced, (plus more for garnishing at serving, if you wish)
1mediumjalapeño pepperseeds removed, minced
1/2cupred onionchopped
1/4cuppacked chopped fresh cilantro, plus more to garnish, if you wish
1/4cuplime juicejuice of 2 limes
1teaspoonlime zestfrom 1 lime
1/2teaspoonKosher saltor more to taste
optional: fresh ground black pepper
optional: 1 tablespoon maple syrupor more to sweeten
Instructions
In a large mixing bowl, combine diced strawberries, minced jalapeño pepper, chopped red onion, chopped cilantro, lime juice, lime zest and Kosher salt.
Gently stir to combine. If you need it to be sweeter, you can add 1 tablespoon maple syrup or amount to taste. If you need it to be more savory, you can add more salt, a pinch at a time. Fresh ground pepper optional.
Notes
You can make ahead (overnight at most) or make it and serve right away. This recipe does not need any time to marinate - if you prefer to serve it cold, you can chill it for 30-60 minutes in the refrigerator.
If you do opt to use the sweetener (syrup, honey, etc) keep in mind that it will begin to macerate, or break down, the strawberries which can cause them to get softer over time. So try to serve it right away if you can. If making ahead, add the sweetener just before serving.
Maple syrup or honey come in handy during the off season so you can enjoy this strawberry salsa year round.
