Combine mayonnaise, ginger and salt in large mixing bowl
Stir in chicken, grapes, celery, green onion, and pecans.
Serve on a lettuce leaf or sandwich buns.
For this recipe, you can use a store-bought rotisserie chicken, leftover shredded chicken or cooked chicken breasts. I prefer the ease and convenience of a rotisserie chicken. Simply cut the breast meat off the bird and cut it into cubes. I use the remainder of the chicken to make enchiladas.
I enjoy eating this chicken salad right out of the bowl, but if you are serving it at a potluck or bridal shower, serve each serving on a bed lettuce.
