Place the olive oil in a frying pan over medium heat.
Sautee the garlic and spinach until the spinach is completely wilted and the garlic is very fragrant, about 3-5 minutes.
Stir together the cream cheese, mayonnaise, Parmesan and 1 cup of the cheddar cheese. Add in the spinach- garlic mixture and artichoke hearts. Taste and season.
Spoon the dip into a oven-proof serving dish and then cover completely with the remaining cup of cheddar cheese.
Bake for 20-25 minutes, until cheese is golden and bubbly.
Notes
In the recipe I indicate that you need to taste and season with salt and pepper - do not skip this step! And feel free to add in whatever additional spices or seasoning you see fit. Add a dash of paprika or a bit of oregano if it seems right to you. Comforting, party-style food is all about taste so make your spinach dip suit your taste!
