Potatoes Anna

I found this recipe at Annie’s Recipes so I’m including for March’s Cooking with Alicia & Annie blog event.

This is a very simple but tasty dish. The only problem I had is that some of the potatoes weren’t cooked all the way through. I’m not sure if that was because of the thickness of the slices or the length of time in the oven. I also didn’t have a cover for this dish, just foil, next time I will try it with a covered casserole.
You can play with this and add any herbs or seasonings that you want. The recipe calls for good old salt and pepper and that’s how I tested it. I personally think they needed more time in the oven so they could brown more.

Potatoes Anna (Pommes de Terre Anna)
6 medium potatoes, pared and thinly sliced
1 1/2 tsp salt
1/4 tsp pepper
6 tbsp butter

Preheat oven to 425 F. Lightly grease a casserole dish (be sure it has a tight fitting lid). Gently toss the potatoes with salt and pepper. Layer a third of the potato slices in circular fashion around the bottom of the prepared casserole dish. Dot with 2 tablespoons of butter. Repeat two more layers.

Place cover on casserole and bake for 30 minutes. Remove cover and bake for 5 more minutes.

Invert on a platter to serve. (I served them right in the casserole dish)
