Do you eat avocados? I’ll admit, aside from guacamole, I hadn’t given much thought to the marvelous little fruit until recently. In the last year or so I’ve broken out of my shell and tried avocados in a few different dishes, including a fabulous tropical salad I’ll be sharing with you soon! I’ve seen avocado recipes popping up all over the food blogs I love too.
So when Avocados from Mexico said they were running a giveaway and wanted me to share it with all of you I had no problem with that. Everyone should try avocados at one time or another, and those that already love “nature’s butter” entering this giveaway is a given!
If you hadn’t though about it before, avocados can provide a simple and quick way to power up breakfast and make it distinctly delicious. You can easily spread fresh avocado on toast with a dash of salt and pepper, or just dice into egg wraps or blend into smoothies.

Here’s a quick breakfast recipe you can try at home. I had mine this morning and it was very tasty!
Avocados on Toast
1 fully ripened avocado from Mexico, halved, pitted and peeled
Salt
Ground black pepper
2 large slices bread, toasted
Optional: 2 slices bacon, cooked and halved or 2 tablespoons chopped tomato
In a bowl, coarsely mash avocado with a fork; season with salt and pepper to taste. Divide avocado onto toast and spread to cover; cut each slice in half.
If desired, tuck a piece of bacon into avocado on each toast half or slice tomato over top and serve.

I’m one of those people who hasn’t ventured out of my comfort zone to eat avocado, except in guacamole. Love your idea of adding it to an egg wrap, I’ll have to try that soon.
Avacados are my sll time favorite food… I dream of them and will eat them any way I can!!
I keep reading about this “avocado on toast” thing and I just can’t imagine it. Guess I’ll have to try it!
