TWD: Sweet Potato Biscuits

One of my favorite bloggers is this week’s host for Tuesdays with Dorie. Erin of Prudence Pennywise selected Sweet Potato Biscuits, which can be found on page 26 of Baking From My Home to Yours, or on Erin’s blog this week.

These biscuits whip up in no time, but you really have to be extra gentle with the dough or you’ll get no rise on the biscuits. They include a 29 ounce can of drained sweet potatoes in light syrup, mashed with a fork. It really adds a nice taste, especially since I am not much of a biscuit fan.

My dough was 1/2″ tall before baking and almost 1″ after baking, yet they still looked flat. LOL

They were good, I let them cool all the way and served them at dinner with butter and honey. Good combo. :) Hubby liked them plain even. May try these again at Thanksgiving!

    These look really tasty. I love sweet potatoes anyway- and they are so good for you.
    A couple of my biscuit recipes did not rise as much as I would have liked, but they still tasted great.

    How did you get them all so evenly shaped, etc.? Great color. I think mine got a little out of shape tranferring from cutting surface to pan…some things I cannot just be expected to be good at. We loved these, but I need to work on rise and presentation. (Oh, really, who cares, I have teen guys and they barely look at anything before devouring it! They loved them just the way they were!)

    Agreed Amanda, Thanksgiving sounds like a good idea. They can be made ahead. Bonus! Your look delicious and I'm glad your family like them. How can you not when you add butta and honey.

    I've always wanted to try sweet potato biscuits. I may have to mix up my pumpkin obsession with a little sweet potato soon. And I love biscuits (why aren't you usually a fan?)
    I always bake my biscuits close together (barely touching), I think it helps them rise (they sort of push each other along). Also, I've heard making a small indentation (like a light thumbprint) on the top of each biscuit helps… I'm not sure if that really does anything or not but I do usually tap the tops with my thumb before I bake them.

    i've found that a lot of dorie's biscuit and sconey-things don't rise much..what's up with that? anyway, they did taste good, and you're right-perfect for thanksgiving!

    your biscuits are so uniformly shaped! mine were just globs since my dough was so sticky. i love biscuits with butter and honey….or whipped honey butter :)

    I was thinking that these would be good for Thanksgiving too. Getting these to rise was extremely tricky, in fact I don't know if it's possible to get them higher than you did! They look delicious!
