TWD: Four Star Chocolate Bread Pudding



This week’s Tuesday With Dorie recipe was chosen by Lauren of Upper East Side Chronicle. YOu can get the recipe for Four Star Chocolate Bread Pudding on pages 410 and 411 of Baking From My Home to Yours or by visiting Lauren’s blog. 

First off I’m going to say that this was delicious. While Dorie says this is best served room temperature or even cold, I actually preferred it warm with a drizzle of chocolate sauce or cream anglaise (recipe in Dorie’s book, a simple English custard). Mmmmm. This was great for me. I am British born and have wonderful childhood memories of warm vanilla custard, the aroma brings them all wafting back!
Now I also have to tell you that this is the SECOND time I made this bread pudding. The first time wasn’t as successful. Dorie was kind enough to answer my questions and we figured out that it had to be the bread that I used. I had chosen a homemade wheat bread for the first version and it just didn’t work. it was too dense, was only 1/3 of the height it should have been and just wasn’t attractive. In fact, the word “meatcake” came to mind. :-p


The second time around I used a wonderfully high crowned white bread I bought from the bakery, unsliced. Half the loaf was the perfect amount and the recipe came together nicely. I did toss in some cinnamon and some dark chocolate chips, but you really couldn’t even tell they were in there. 
Overall a very tasty recipe, another winner from Dorie Greenspan! :)

    I almost did the same thing as you, and then decided on a fluffy white roll from the grocery store – sometimes, quality isn’t what you’re looking for :) The second try looks awesome, and I agree – this tastes wonderful warm.

    I think the overwhelming majority have preferred this warm, so you are not alone. Yours looks so wonderful with all the oozing sauce, and the powdered sugar…wow…really lovely plating. Thanks for the birthday wishes, btw! :-)

    That looks GREAT with the sauce and sugar! Mine was rather dry – sauce would have made it “less dry”. Yes, warm was my vote too! Nicely done!!!

    Second time is a winner! Yours looks wonderful (much prettier than mine). I prefer it warm too, and I wished I had added a bit of cinnamon, which my friend suggested afterwards. Good job!

    Your second to last photo looks just like the one in the cookbook! Glad that you were able to figure out the problem with the first batch, because the final result looks amazing.
