This week’s Tuesday with Dorie recipe for Chocolate Amaretti Torte was chosen by Holly of Phe/MOM/enon. If you would like the recipe for this delicious, melt in your mouth torte, go to her blog or you can find it on pages 276-277 of Baking From My Home to Yours by Dorie Greenspan.
I couldn’t find the Amaretti cookies that Dorie suggested using in the book, so I ended up baking my own. Because they were still soft in the center, I used the edges of the cookies and weighed them out to 2.75 ounces per Dorie’s recommendation. It worked beautifully. My daughter and I ended up polishing off most of this torte ourselves, but hubby had a couple pieces too and he really liked it. My daughter said, after taking the first bit, “This is really good. It reminds me of something rich people would eat for dessert in a fancy restaurant.”

Yah, that isn’t the cake we’d bake at our house everyday. I’m so glad yours looks about the same as mine. I had no idea if it was right. I also made homemade amaretti. Your look flatter than mine and were crunchy throughout, but worked great.

I overbaked my amaretti cookies, hoping they would be crunchy and they were, but I wish I had left some softer because they tasted so good!
