TWD: Coconut Butter Thins


Sorry for the update, just wanted to add another photo, trying out my new lightbox and testing settings on my camera ;) Hoping for less graininess!


I started baking along with the blog event Tuesdays with Dorie about 6 months ago. You would think by now I would remember that every time I make a recipe from this book I should reduce the time suggested! LOL Almost every recipe I have tried needs less time than suggested, and yes I have used an oven thermometer, my oven is fine. ;) So once again, my first batch was overdone and I didn’t even photograph them, but the second batch, even though darker than they are supposed to be I’m sure, still tasted great. The coconut mixed in adds a wonderful chew factor to this otherwise tender crisp cookie.

I think that I should have chilled the dough longer. Dorie said a minimum of 2 hours in the fridge and up to 24 hours. I did the minimum, I think that’s why mine spread so much.

At any rate, these are delicious! Thank you to Jayne of The Barefoot Kitchen Witch for choosing these cookies. The dough is wonderful too! I juiced half of the lime and mixed it with powdered sugar to make a glaze, a nice sweet tart topping, though no topping is really needed.

By the way, the overdone crunchier cookies are perfect dunked in coffee! :)

    Your cookies look great. I drizzled mine with white chocolate, but I love your lime juice addition! For the chill time, I stuck mine in the freezer for 30 minutes. They didn’t spread too much.

    I do too, have a super-burner-oven! LOL But I’m used to it by now… after completely burning a couple of expensive recipes… one learns quick! LOL

    These look beautiful! I might let mine chill longer next time as well, but it was hard to find much fault with these — they were pretty close to perfect. I love how you glazed some of yours!

    Your cookies look great! Mine spread a bit too and I chilled them overnight. Great idea to glaze them because what’s not better with glaze? :)

    OOOh, I love your icing idea. I ended up using my lime juice in guacamole as a way to use it up. I figure if coconut cookies get a little overdone, it makes them like toasted coconut, and even better. :)

    Nice touch with the lime glaze. :) I think they were supposed to spread. Dorie says you’ll end up witha lacey cookie. Mine didn’t spread too much. My first batch was also overdone. Still delicious though. Yours look great!

    I love this cookies, they are defintely a favorite, like Pecan Sandies. I didn’t have any citrus to add to mine, but they were wonderful none the less!
