I thought this recipe was pretty tasty, but I’m wondering if I baked mine too long as mine were crisp for the most part. I did some with the toffee bits and some without.
Now while I have all you TWDers here (wink wink) I’d like to invite you to join me for Thrifty Thursdays! Please see the post below this one for details, hope you will join me!

These looks good Amanda, I’ll have to try this, the ice cream sandwiches sound like a good idea!
Mine were really crisp too, so I don’t think you baked them too long. But they sure came out great!
Your bars look great. YUM! I agree, the ice cream sandwiches were hard to eat. I ended up splitting them like an oreo and eating each half separately.
They look great. Mine ended up being chewy. Hmmmm.
Your crunch bars look fabulous Amanda!! I loved these a bit too much I'm afraid. They were so crunchy and buttery. I didn't have any toffee bits so used M&M's! Very colourful to say the least! I bet those ice cream sandwiches were wonderful!!
Yours look great! I had read the P&Q and only made a half batch so I was real careful about how long I left mine in…I think I probably took mine out a little early. But they are nice and chewy. Your ice cream shot looks yummy!
Hahah you are so right, the ice cream sandwiches are not easy to eat! But were still tasty! Yours look great!
Mine were pretty crunchy too so I didn’t even attempt an ice cream sandwich! Your bars look wonderful!
These brownies look amazing!
Oh those bars look good. I love thrift stores and get most of my cookbooks from them!!
The bars look wonderful!! I am sure I could manage to eat an ice cream sandwich, bring on the mess:)
Amanda your bars look amazing. Mine turned out more on the chewy side because I don’t think I baked them long enough. They were also a bit greasy thanks to the underbaking. Good on you for doing the ice cream sandwiches though. In my head I was going to do them, but the follow through just wasn’t there.
Wow – yours look absolutely perfect!
Yours almost look like brownies.
Maybe you did bake them to long.
I wasn’t quite sure on the baking time, but I did 20 minutes, and the batter was bubbly and ‘percolating’ so I pulled mine out.
OOOHHH!!! Look at all that Chocolatey deliciousness. They don’t need ice cream to be just perfect.
Very, very well done, Amanda!
After making those myself… I can imagine that in fact, those ice cream sandwiches must have been hard to eat indeed! Although, super tasty!
Yummy! They look like brownies. I think mine were slightly undercooked which i liked. Good job :)
Your cookies look so chocolately!
Great job
Hey nice bars! I loved this recipe and thought it was super easy after the cake!
oooh–great idea, forming ice cream sandwiches with these. really nicely done. :)
I think they’d be easier to eat crumbled on some ice cream. The sandwiches look tasty though!
Mine were crispy and dark too! I’d like to try them again and bake them a little less too.
Ice cream sandwiches are a great idea! These look delicious!
We were going to eat them with ice cream — although not as sandwiches — but there were just too many desserts. I bet they’d be delicious broken up over ice cream.
Mine were crisp, but not dark. I omitted the espresso. Maybe that could be it. They look great. I will probably include these on next year’s holiday plates. They were just so easy and GOOD!
They might be hard to eat, they look so yummy with ice cream!
So heavens those look yummy!!!
OMG, your blog is so cute!
Love the bars, love the ice cream, and love the pics.
You are so my blog friend now.
btw, thanks for visiting me! :)
XOXO
Mine were crispy, but not too crispy. I do think I’ll cook them for less time next time, though, like you.
I love that you ate them with ice cream (or tried to anyway) – that ice cream sandwich photo in the cookbook was definitely tempting to recreate!
i think i baked mine a tad too long as well. i did halve the recipe and used a smaller pan, did you do the same? still delicious even if overdone, especially as ice cream sandwiches. mmm.
I love the ice cream smooshed in the middle!
I love these cookies and yours look great.
Ah, very yummy!
OMG…Yum-o
We liked these bars, too. Yours look really good.
Mine had a crispness to them as well. I think that yours look gorgeous!
Oh wow, these look so delicious! I like that they are well browned. Mine turned out a tiny bit undercooked in the middle, so I think you did the right thing.
mine were crisp, too, but i wonder if it was because they were so thin? yours look great (esp with icecream:) )
Yummy! The ice cream sandwiches look just like book!
YUM! I love the thick layer of chocolate. I wish I had done the ice cream sandwiches now.
