I’m a little embarrassed. I’m 41 years old and all my life I thought a Dutch Oven was simply this big pot I have with a lid. To my defense it is shaped like a Dutch Oven, but it’s just a regular pot. Turns out that a Dutch Oven (I know you already know this, but humor me ok?) is actually a thick walled iron (or cast iron) pot with a tight fitting lid.
Duh.
Soooo, when I made this wonderful Irish Beef Stew I found at La Bella Cook (thank you Bridgett!) I didn’t understand why my liquid was drying up so quickly. Same thing happened with the last “Dutch Oven” recipe I made. LOL
So when I was in WalMart the other day I thought “I’ll just get a new one”…. $58.97!?! Holy crap, guess I’ll have to wait till after Christmas LMAO!
So anyway, I did salvage this tasty stew, I added more water and it was ever so very wonderful. Yum! Thank you Bridgett for the recipe!
Irish Beef Stew
Bridgett cut this recipe in half and so did I.
4 pounds beef chuck cut into 1-1/2 inch cubes (I used beef stew meat)
1/2 cup flour
2 cans tomato paste (6 ounce cans)
2-1/2 pounds new potatoes, scrubbed
2 medium onions cut into 1 inch pieces
2 can beef broth
1 can irish stout beer (I used Guiness)
10 garlic cloves, sliced
salt and pepper to taste
2 boxes frozen peas, thawed
Preheat the oven to 350 degrees.
Toss the beef with the flour in a 5 quart dutch oven. Stir in the tomato paste.
Add the potatoes, garlic, onions, broth, and beer. Season with salt and pepper.
Cover and bring to a boil.
Transfer the pot to the oven and cook until the meat is fork-tender, about 2-1/2 to 3 hours. Stir in the peas and serve.

I love cooking with my dutch oven. They are a perfect way to go from stove top, to oven, to table. I don’t if it’s crazy to say, but I actually own five different sizes…but I’m not counting. hehe
Well color me embarresed, I didn’t know that either! I thought it was just a big pot with a lid too!! This looks very good Amanda!!
I’m with you…..I thought it was just a big pot with a lid too…oh well….we learn something new everyday (hey, and I am older than you!!!!!)
This looks delicious! Perfect for a cold day. I love my Dutch oven- it’s great to cook with!
Thanks for the lesson in Dutch Ovens! I had no clue either. So, now that you’ve cleared that up for me what’s a French Oven, just a round Dutch?
I’m saving for one of those pretty (LOVE all those colors) Le Creuset ones. I figure I’ll have saved enough by the time FL’s very short winter weather rolls around! LOL!

I loved this stew and I am glad you gave it a try. Definitely worth the effort!
I’m 41 too :)
I’ve been craving stew, so this post lured me in! I bought a Dutch oven for the first time not too long ago… got mine at Marshalls for about $49. Most of the ones I’ve seen are well over $100 so I was pretty happy with my cheap find!
