TWD: Lenox Almond Biscotti


I’m so excited, I thought I was going to have to back out of Tuesdays with Dorie this week because of my oven being on the fritz. We are still waiting for parts, but the repairman disconnected my ignitors so I can use it in the meantime, yay!

So I’m a day late making the Lenox Almond Biscotti, but it was worth the wait. it’s truly delicious and I am a huge fan of almond flavored anything :) My father in law and I have been munching on them all day, I am sitting here with a cup of coffee right now! This dough made a nice chewy cookie too. When I cut off the ends as mentioned in the instructions of Baking: From My Home to Yours by Dorie Greenspan, I ate those and they were warm and chewy! Mmmmmm. I wanted to thank Gretchen of Canela & Comino for selecting this recipe, because to be honest, I probably never would have made it on my own. :)

Comments: Something I didn’t understand from the book was the soldier thing.I just can’t see how they would stand up vertically. I did lay mine on their sides and they came out fine. Something I noticed was that half of mine are still chewy. I think when I separated the two batches of dough, one was larger than the other, so one remained chewy. Doesn’t matter though, they are still very tasty!

    These would be great chewy or crispy. In fact they were good as raw dough and at the first baked stage (ahem, I had to sample). I love the way yours look – isn’t almond flavor just the best? And your light is great in your pictures.

    They look good. That’s another thing I really liked about them. It seems like you’re messing up while you’re making them, but they still turn out in the end. I really liked the almond flavoring, too–more than I thought I would. Glad you got to make them in the midst of oven woes.

    Yeah! Oven = good! I completely didn’t understand the marching band thing and I took everything literally. Your biscotti look so delicious and pretty in your mug!

    I agree with Dulzura Magica…give me a big cup of coffee and a couple of these biscotti and I’d be all set! YUM!!

    They look beautiful! I think they were supposed to stand up just the way you made them. I thought that was a bit of a funny instruction on Dorie’s part! :)
