Again this week I decided to make my Tuesdays with Dorie recipe early. I was actually excited to make this recipe as I’ve been experimenting with everything except for chocolate lately. Oh and did I mention that chocolate is my best friend on PMS weeks? LOL Anyhoo, I knew everyone here would like these so off to the kitchen I went.
I have to say that these cupcakes are really delicious! I read a lot of the comments on the TWD blog about several bakers’ cupcakes coming out dry. I made sure to watch mine very carefully to avoid overbaking. I cooked them on the recommended 350, but I checked mine at 20 minutes, still not springy, and added 2 more. I pulled them out and was surprised to see that they were a bit flat instead of crowned like cupcakes usually are :-/
I think that’s because I weighed my flour and used 4 oz. When I originally measured my flour it came to 4.5 and maybe I should have just stuck with that. At any rate, i was a little worried about them falling apart, but overall they held up very well. I did have one that crumbled a little when trying to dip into the ganache, but other than that we achieved success :)
I did drizzle a few of them with orange candy melts for the kids. They’ll be home from school in a few hours and I know they will enjoy them. I sure did!

i think they look a lot better without the wrappers! Great job with yours and the flat tops just has this silent appeal for me. Glad you enjoyed these!

You should have done the white zig-zag icing on the top becasue then they woudl look just like the Hostess Snack Cakes!! Will have to try this recipe. I like the flat tops.
